We are going to visit Animal Kingdom and Epcot on 12/9 and 12/10. I'm worried about what it will be like after the sun sets? I know Epcot was lit up pretty well, but that was 2 years ago. What should I expect for AK and Epcot?

All of the parks are very well-lit, even after the sun sets, Devon.  You needn't worry about being able to see pathways and that sort of thing.  Some attractions at Animal Kingdom do close when it gets dark, but those that are operational will be fully lit.  Personally, I really enjoy walking through the parks at night. Disney even gives attention to detail in lighting, creating a beautiful ambiance in each of their parks, especially after dark.  I hope you enjoy it!
