Hi, Bela! You are going at a great time to be a vegetarian at Walt Disney World! It seems in recent years, the options for vegetarians are becoming more varied and more available, and that's certainly going to help make it easy for you to find some place to eat!
Many of the counter service restaurants are now offering garden or veggie burgers, and you'll also find some of the restaurants offering things like roasted vegetable wraps and vegetarian chili. At the Tomorrowland Terrace Noodle station, you'll find a vegetarian noodle bowl with tofu, or tofu with steamed rice. Kids can get peanut butter and jelly if they would rather have that.
If you are not an ovo-lacto vegetarian, you will find some delicious pasta dishes at Tutto Italia in EPCOT, but many contain cheese, so if you don't eat dairy, your options are limited. There is a fabulous vegetable couscous at Restaurant Marrakesh at EPCOT as well. The San Angel Inn at the Mexico pavilion also has several vegetarian options.
One of my favorite restaurants, Artist Point at Wilderness Lodge has a vegetarian smokey portobello soup and a potato potsticker dinner that comes with edamame and a soy dressing.
