    In using the park hopper passes, if we were to go to just the parade/fireworks display at night, does that count against 1 day of the park hopper.

     Think of the park hopper as an added feature to your park admission passes. You use your admission pass to enter the park of your choice. Having the park hopper option allows you to hop to additional parks that same day. The park admission tickets you purchase are for a set amount of days, and the park hopper option on your tickets is equal to those days, and essentially tied to them, as it hurts my head to think of how you would hop to a second park without valid admission to a first park. So, that does mean that there may be days that you don't make use of the park hopper option. Luckily, there are some great advantages to having the park hopper if used correctly to make up for those days that you don't use it. Have a magical vacation!
