I’m happy to say that your plan is
spot on! You can definitely split the group during your FastPass+ time slot to make sure that everybody gets to ride. It's super simple to do it to take turns in the care of a child or adult that requires company.
I also have
great news about the rides that you’re not able to book
FastPass+ for. The
Rider Switch service was designed for Guests like you. This complimentary service was created so that families can take turns to enjoy an attraction and wait on the regular line
only once and not twice.
The
list of attractions where it’s available is published online so that you can plan your daily itineraries. You can then consider your FastPass+ reservations and the attractions where you intend to use Rider Switch to make the perfect plan!
To use Rider Switch, alert the Cast Member at the entrance of the attraction that your family would like to take advantage of it. Then, your group of 8 will be divided into two groups, and only the first will have to wait on the regular queue to ride the attraction. Once the first group is exiting, the second group will be allowed into the FastPass+ line to enjoy the attraction.

I can even think of a costume idea where seven people could dress as famous dwarves, and the remaining member could dress as a memorable (and beloved) princess!
