Welcome to the Disney Parks Moms Panel! I am delighted that you are staying at Disney's Polynesian Village Resort! My family adores this resort.
On a prior visit, we had to get from Disney's Polynesian Village Resort to Princess Storybook Dining at
Akershus Royal Banquet Hall for an 8:10 a.m. breakfast reservation. Although the
Resort Monorail was operating by 7:15 a.m., the monorail from the Transportation and Ticket Center to Epcot was not. So we had to take a taxi. There were a few taxis waiting outside of the front entrance to the resort, so we just walked outside and requested one.
Since that time, I have started using Uber as well. I love that, with the app, I can schedule a pick-up at a certain time or simply request a ride immediately. Drivers typically have arrived within 10 minutes of the request. Since you are staying at Disney's Polynesian Village Resort, you can also try the Minnie Van™ service with Lyft. To enroll and/or ask questions, be sure to check with a cast member at your resort when you arrive.
Marc, I would allow at least an hour to get from the resort to your dining reservation. But, I am loving your strategy. My family does pre-park opening dining reservations so that we can enjoy the park for a few minutes before the crowds arrive. Epcot is just lovely early in the morning. Be sure to take a few photos on your way to the restaurant. On our last visit, we were able to get in the standby line for Frozen Ever After by 9:10 a.m. and only waited 10 minutes to ride!
