If your Jedi Youngling wants a lightsaber of his own that he can use to channel the Force, you do have a few different options if you haven't been able to secure a reservation for him to build his own at
Savi's Workshop. The lightsabers that you build yourself are quite heavy and made from materials that are different than the ones you'll find at a lot of the merchandise locations, but I'm pleased to tell you that all manner of artifacts and relics from a galaxy far, far away can be found at
Dok-Ondar's Den of Antiquities on the planet Batuu. They aren't going to be exactly the same as the ones that can be built from your choice of scrap metal at Savi's Workshop, but they are the same quality. If he's got a favorite Force-user, this is where you'll find their replica lightsabers! Since it's a hub for activity from all around the galaxy, news travels really fast to
Black Spire Outpost so they've even got some brand new lightsabers that were featured in the latest Star Wars film, Star Wars: The Rise of Skywalker. There's even an entire wall of holocrons to admire and your son can choose from ones that contain either Jedi or Sith knowledge, depending on which side of the Force he identifies with!
I also want to say that even though you haven't found a Savi's Workshop reservation yet, keep trying. Guests are constantly changing their minds about what they want to do when they're on vacation and since it's so easy to modify your plans using the
My Disney Experience app, reservations are getting dropped and picked up all the time. Check for open times as frequently as you're willing to over the next couple of days, and you can even ask the Gatherers at Savi's Workshop on the day you're there if they have any standby reservations available. You never know what kind of magic might happen!
