Restaurant reservations are strongly recommended but not required. But as you probably noticed, most time slots don't stay open for long. I've seen families go to one of the restaurants and wait for 1st available, but it is a risk you'll be taking.
If you're in a resort or park, and near a table service, I'd ask one of the hosts if there are any close slots available you can take. If not, you may have to just get a quick service..
Bus transportation is optional service. You are more than welcome to drive your car if you prefer.
