I'm so glad to hear that the Moms Panel has been such an invaluable tool in your planning! We love hearing such positive feedback.
It sounds like you have a great plan and one that we adopt as a family, too! Many times we are so busy having fun that we don't want to stop to eat yet another big meal, but you still want something substantial enough to keep your hunger at bay. Here are some of my favorites.
In Magic Kingdom, the Waffle Sandwiches at
Sleepy Hollow are super unique and offer different varieties to appeal to everyone. There are both sweet and savory options. They are super delicious, especially the Ham, Proscuitto and Swiss Waffle Sandwich. While in Epcot, I love to get Bratwurst or a Nudel Gratin (a take on mac and cheese) at
Somerfest in the Germany pavilion. All of the snacks at
Anandapur Local Food Cafes in Animal Kingdom are wonderful including the eggrolls and fried rice. Lastly, at Disney's Hollywood Studios, I enjoy stopping mid-day for my favorite snack, the Carrot Cake Cookie at the Writer's Stop. While this isn't exactly a lunch alternative, it is quite filling and sure to satisfy! This little shop is tucked back near the entrance to Sci-Fi Dine-In Theater.
Keep in mind that you can also never go wrong with a box of popcorn, a Mickey pretzel or turkey legs, all of which can be found in most all of the four theme parks in multiple locations.
