I would choose a
Value Resort that appeals to you and then book 2 rooms. Request
connecting rooms so there will be an interior door connecting the two. (Room requests cannot be guaranteed, but put the request on your reservation and a quick fax/call to your resort a few days before your vacation will help to increase your chances!) Book Standard Rooms which are not as close to the food court/bus stop, but a great way to save some money.
When purchasing park tickets, remember that kids under 3 enter the parks for FREE, and kids ages 3 - 9 qualify for a Child Ticket which is a few dollars cheaper than the Adult Ticket. Do not add on pricey ticket options like park hopping or water parks. This will really help to keep your ticket cost down.
Feel free to pack snacks for the park to save money. Refillable water bottles are great to bring along, and cups of ice water are always free at counter service locations. Fresh fruit is available throughout the resorts/parks for about $1.29 per piece (subject to change) which is a great value and a tasty, healthy snack. From home, bring autograph books, rain ponchos, and hats. By bringing items from home, you will save a lot of money on those "little things" that really add up!
