Mary, the Walt Disney World Resort memories that are closest to my heart are those of traveling with my grandmother who had similar mobility concerns, so I appreciate this question. As we toured the park with her we were mindful of which attractions would be easiest to access, so hopefully I can help in your planning.
First, I'll direct you to THIS PAGE which shows all attractions at all four theme parks. You can filter attractions by height and I find that attractions that are for any height often are easier to access as well. I also love that Walt Disney World has some amazing shows that are not only perfect for escaping the heat but also great to get off your feet! Some of our favorites are:

Finally, Mary, if you find that walking around is a bit too cumbersome to enjoy the parks, you can
rent a wheelchair or
ECV, even if it's just for one day! You'll find this option in all four theme parks.
