I hope you are getting excited for your vacation! It looks like you have had fun planning your dining, you've made some excellent choices.
Having traveled to the Walt Disney World® Resort numerous times when my oldest children were close in age to yours, I would suggest the 1900 Park Fare option. After a busy day at Magic Kingdom, trying to get over to Epcot for a 7:25 reservation at Garden Grill may be more stressful then enjoyable. I also found with my own children, an advanced dining reservation for anything later than 6pm at that age either resulted in a dinner meltdown, or a child sleeping on my lap while I tried to eat.
Staying close to the Magic Kingdom for dinner will be much more enjoyable for the whole family. Another suggestion is
Whispering Canyon Cafe at Disney's Wilderness Lodge. This lively and entertaining option is only a boat ride away from the Magic Kingdom, and could offer a welcome respite from character dining while still serving up a playful environment for your children. Your 2 1/2 year old might even enjoy getting in on the action when it's time for the hobby horse races around the restaurant.
