1st trip on 12/23-12/30. Have the DDP but plan on eating a few extra meals - both sit-down and quick. Can we choose which meals to put on the plan and which ones to pay xtra for? Or will they take the first 7 meals of each and use those for the plan?

Hi Beth and Congratulations on your first Walt Disney World Vacation! Each time you dine, the Cast Members will ask if you are participating in the Disney Dining Plan and ask to see your Key to the World Card. I often told the Cast Members at the Counter Service Locations that we were using the Disney Dining Plan when I arrived to the counter, before I ordered. If you do not want to use the Disney Dining Plan for a meal, then you will not tell the Cast Member you are using the Disney Dining Plan and you will pay for your meal. You can still use the Key to the World Card to charge the meal purchase to your guest room if you like. Have a Magical Vacation!
