Animator's Palate, I know you'll have an unforgettable trip.
While debarkation day always makes me feel like Sadness from Inside Out, it sounds like you're hoping to fill your time with some fun before your flight. Christy, there currently isn't a service provided by Disney at the port or a Disney Resorts Collection hotel that stores luggage, but I have a couple of ideas.
If you haven't yet arranged for transportation from the port to the airport, you may want to consider a car rental, just for the day. That way you could easily lock your luggage in the car while you enjoy a park or maybe a meal at
Disney Springs and then quickly return to the airport in time for your flight.
Christy, another option, since you'll be back at the Orlando International Airport, is to rent a room for a "day stay" at the Hyatt Regency. This hotel is connected to the airport and allows day-only room rentals. In this case, you could leave your luggage in your room during your excursion.
