As to your question, you are welcome to bring your car seats aboard the ship. When you arrive at the port, place luggage tags on your car seats, and they will be transported to your stateroom. I think you'll be pleasantly surprised at how much space is in your stateroom. The car seats should fit on the floor of your closet. The beds are all raised and will easily fit your suitcases.
I purchased a compact, adjustable car seat when my son was little. It was foldable and fit perfectly in my carry-on luggage.
