I would strongly recommend making as many reservations as you can before you arrive. This increases the chance of you getting the restaurant you're interested in for the time and date you like. But if you're planning to make reservations, make them soon! Since guests can make reservations up to 180 days in advance, you may have a smaller window to choose with it being so close to vacation. If you make reservations while you're there, you'll be at the mercy of what's remaining. Then again, I know of some that winged it by just going to the restaurant and they worked them in. But that's a HUGE risk to take...
