Hello Stacie and welcome to the Moms Panel.

My family loves to visit Walt Disney World during the last weeks of May, comfortable weather - the possibility to experience medium to low crowds, and Star Wars Weekends at Disney´s Hollywood Studios!
Having stayed at both Port Orleans Resorts, the Riverside Resort landscape will benefit from the weather and be a nice perk to your vacation.

Your vacation party is mainly adults with two young kids that will be able to enjoy most attractions and shows at the parks.  Spending one day at each of the main Disney parks - Magic Kingdom, Animal Kingdom, EPCOT and Hollywood Studios (especially during the weekends) - is a most.
Then you could revisit your favorite parks, visit Disney´s Water Parks or stay one day at the resort enjoying the Old Man Island pool complex and walk to the neighboring Sassagoula Floatworks and Food Factory for a good Counter Service lunch.  The kids also get to enjoy the Doubloon Lagoon pool at the French Quarter Resort.

I recommend making advance reservations for character breakfast and lunch experiences on restaurants inside the parks that you will be visiting each day:
    - Magic Kingdom: The Crystal Palace or Cinderella´s Royal Table,
    - Animal Kingdom: Tusker House,
    - EPCOT: Akershus Royal Banquet Hall,
    -Hollywood Studios: Hollywood & Vine.
Other character dining I recommend are ´Ohana at the Polynesian Resort, and the Grand Floridian Resort & Spa.
Don´t forget to make advance reservations for other Table Service dining experiences you are interested.

My best advice for visiting parks is to be there at opening time, so that you get a different feel of the parks.  The weather and the crowds are awesome!

Happy to help you plan a magical Disney vacation.
Hope to hear more from you.
