I would definitely take your one year old to “Disney Junior - Live on Stage!”at Disney's Hollywood Studios, which includes appearances from Mickey Mouse Clubhouse, Handy Manny, and Little Einsteins and it's great show for your kids to watch. There is also the "Honey, I Shrunk the Kids" Movie Set Adventure play area where you can relax, let everyone run around, and get all of their energy out! Magic Kingdom has so many different rides and shows that you child will love that there are too many to list! Epcot has The Seas with Nemo and Friends, Journey into Imagination with Figment, and Spaceship: Earth that your child can go on. Animal Kingdom has Camp Minnie Mickey and many shows to take your child to go see. Definitely, don't miss the opportunity to get the entire group to go on the Kilimanjaro Safari for a Wild African adventure! For the major thrill rides, looks like you guys are perfect candidates for the "Rider Swap" feature at Walt Disney World! When you are in line for a ride that your child cannot participate in, your spouse can go to a designated area and wait for you and the kids to ride. Once you are finished with the ride your spouse can "swap" with you and take the kids on the ride again without having to wait in the long line! Here is a guide that has height restrictions for all the rides at Walt Disney World if you do not see a ride on the list, your child can ride it!
