I am so glad you already know about Walt Disney World's Rider Switch program.
Rider Switch can make touring so much easier for families with young children. When Rider Switch is not offered, it does typically mean one of you will hold your one year old in your lap. I found two graphics that detail attraction height ranges in the parks you are planning to visit.
Magic Kingdom Park Epcot (note: Mission:SPACE does have a 44" height requirement)
I also want to recommend that you note the locations of the
Baby Care Centers in the parks. They are a wonderful, quiet place to tend to your baby and toddler's needs.
