We are traveling to Disney World 10/29-11/5/2008. I understand that the basic dining plan is now based on the number of nights at Disney, not the number of days. We purchased an 8 day park hopper, can we use any extra credits on our last day ?

Based on the dates you supplied in your question, I can tell you that you have until midnight on November 5th to use your dining credits.  They do not expire until midnight on the day you check out.

When we have used the dining plan in the past we've found that we often times have snack credits remaining at the end of our trip.  We spend the last few hours of our vacation picking up souvenirs at Downtown Disney.  While we're there, we head over to Goofy's Candy Co. and make good use of those left over snack credits.  The treats there are small and convenient; perfect snacks for the long plane ride home!

Given your inclination to plan a magical trip, I can already tell we have a lot in common. I'm Darcie, and my friends would be the first to tell you that Disney trip planning (especially dining!) is my love language. Of course, the vacations my family enjoys today look much different than they did when our kids were little, but while some of our favorite activities have evolved, Disney destinations still top our travel wish lists. Let's work together to plan a downright dreamy vacation for your family! Learn More About Darcie
