Hi Jennifer, trying new restaurants is one of my family's must-dos each trip, so I love this little challenge of yours. I have several ideas for you and hope that my suggestions appeal to you.
As for new restaurants, I highly recommend the new
Jungle Navigation Co. Ltd. Skipper Canteen in Adventureland of Magic Kingdom. I was able to dine there on my last visit a few months ago. The atmosphere is extremely fun as it is themed as the "dining hall" for the Jungle Cruise skippers. Unique and interesting flavors fill the menu. My personal favorites were the sustainable fish and S.E.A. Shu Mai (much like steamed dumplings). Be sure to take a look around while you wait for your food and you must check out the book titles in the "library" area...highly entertaining.
In regards to other activities "beyond" the parks that you may never have tried, here are a few options. Maybe try one of the
guided tours offered. My personal recommendations are Behind the Seeds Tour, Keys to the Kingdom, or Walt Disney: Marceline to Magic Kingdom Tour.
Characters in Flight, operated by Aerophile would be something to consider if you are not afraid of heights. This teathered balloon takes you high above Disney Springs with spectacular views of the theme parks in the distance.
Be sure to visit the newly re-imagined
Disney Springs for state of the art shopping and dining. See the attached video on what's new at this expanded area formerly known as Downtown Disney. You won't be disappointed.
