You can try walking in to one of those restaurants, but it could be a very long wait. They could also say they are not accepting any "walk ins", though that typically only happens during the extremely busy holiday periods.
There are also great restaurants at the Walt Disney World Swan and Dolphin hotels which are a short walk away from the Boardwalk. When I need a place to go, but I don't have a reservation I generally head over there; you can usually get seated as a "walk up". Todd English's Bluezoo is my favorite restaurant at the Swan and Dolphin. I hope this helps! Write back if you have any more questions!
