Hi Yessica! How exciting - your trip is fast approaching!
And speaking of fast, I can tell you that the best place to find Lightning McQueen is at Disney's Hollywood Studios! Here, you will find Lighting McQueen and Mater in all their glory available for photo opportunities close to the entrance of Mama Melrose's Ristorante Italiano.
And, you have to take in "Lights! Motors! Action!", a stunt car epic spectacular, which has been updated to feature the very one you are looking for, Lightning McQueen!
As for some other great attractions your young ones will enjoy, I would suggest Disney Junior - Live Onstage! and Voyage of the Little Mermaid. Also, don't miss Muppet Vision 3D, and of course, Toy Story Mania!
At EPCOT your kids will enjoy the Imagination Pavilion, and boat rides through the Mexican Pavilion and Living with the Land in the Land Pavilion. They may also enjoy playing some of the interactive games at Innoventions, riding Spaceship Earth, and of course you can't miss The Seas with Nemo and Friends Pavilion! You will enjoy walking around and exploring the pavilions in the World Showcase. Be sure to check the Times Guide upon arrival to see when you might happen to encounter certain characters throughout your journey!
At Animal Kingdom, don't miss "It's Tough to be a Bug", Kilimanjaro Safari, Affection Section (hands on animal attraction), the Boneyard playground, Triceratops Spin, and the shows: Festival of the Lion King, Finding Nemo - the Musical, and Mickey's Jammin' Jungle Parade.
And finally, of course, at the Magic Kingdom - there is just too much to name! But don't miss Buzz Lightyear's Space Ranger Spin, Dumbo the Flying Elephants, "it's a small world", The Many Adventures of Winnie the Pooh, Peter Pan's Flight, and Mickey's Philharmagic.
