What a fun question to get to answer; I love getting to revisit my favorite dining spots at Walt Disney World.

Here are my top picks for counter service restaurants that have indoor seating and air-conditioning at each of the parks:

Magic Kingdom: Columbia Harbour House (click here to see a sample menu)
Epcot: Sunshine Seasons (click here to see a sample menu)
Disney's Hollywood Studios: ABC Commissary (click here to see a sample menu)
Disney's Animal Kingdom: Pizzafari (sorry, no sample menu available)
