As a fellow parent of young Mouseketeers, I've spent a fair bit of time thinking through your question. Walt Disney World is such a magical place for people of all ages,
including toddlers. There are many attractions that your apprentice Pirate will enjoy. Adventure is out there!
Here are some of my personal favorites in each of the four Theme Parks:
Magic Kingdom Park
- Dumbo the Flying Elephant
- "it's a small world"
- Peter Pan’s Flight
- Mad Tea Party
- Prince Charming Regal Carrousel
- Jungle Cruise
Disney's Hollywood Studios
- Mickey & Minnie’s Runaway Railway
- Alien Swirling Saucers
EPCOT - Remy's Ratatouille Adventure
- Frozen Ever After
- Gran Fiesta Tour Starring The Three Caballeros
Disney's Animal Kingdom Theme Park
As you can see, Magic Kingdom Park is by far the best Theme Park for toddlers when it comes to rides. That's why we spend extra time there with our little ones.
Skyler, there are also many shows, activities, and experiences that toddlers can enjoy that aren't rides. My own children absolutely loved
Lightning McQueen's Racing Academy at Disney's Hollywood Studios and the
Swiss Family Treehouse at Magic Kingdom Park. There are also other great experiences, such as
Disney Junior Play and Dance! at Disney's Hollywood Studios and
The Seas with Nemo & Friends at EPCOT, and
The Boneyard at Disney's Animal Kingdom. There are also kid favorites, such as
Mickey's Celebration Cavalcade at Magic Kingdom Park and
Disney KiteTails at Disney's Animal Kingdom.
I guess what I'm trying to say is that your toddler will have more than enough to experience and enjoy. The main thing I'd encourage you to do is take plenty of photos and videos (you cannot take enough!) and allow your toddler time to rest (and maybe nap) in the stroller or hotel.
