Please don't be confused or worried ... you're going to Walt Disney World in 3 weeks! How exciting. I'd be happy to help plan an itinerary. Here are my suggestions:
Day 1: Although you arrive at noon, you'll be able to head straight to the Parks after registering at your Disney Resort Hotel. If your room isn't quite ready, the Cast Members will call (or text!) when it is ready. Our family loves to begin our vacation with Magic Kingdom. It looks like you're arriving on 3/2/14. Magic Kingdom plans to offer Extra Magic Hours until 1:00 a.m. that evening. Extra Magic Hours are "extra" operating hours exclusive to Disney Resort Hotel guests. These hours are subject to change, so be sure to pick up the times for the week when you check in. Experiencing the Parks during these "Extra" hours allows guests to take advantage of lower crowds, generally.
Day 2: Disney's Hollywood Studios (Extra Magic Hours until 10:00 p.m.)
Day 3: Epcot (Extra Magic Hours in the morning starting at 8:00 a.m.)
Day 4: Pool Day
Day 5: Disney's Animal Kingdom
Day 6: Magic Kingdom
Day 7: more pool time until departure

Frozen meet and greet in Epcot will be available during our upcoming trip. On your day in Epcot, I would check with the Cast Members at the entrance about availability, then head directly to the Norway pavilion upon arrival for photos and autographs. The Cast Members will gladly provide you directions!
