You will be pleased to know that theme park reservations are no longer required (as of 9th January 2024). This means you do not need to plan your park days so far in advance, and can even decide on the same day as you can visit every park as you please, subject to capacity. If you have a park hopper ticket you are no longer restricted to park hopping after 2pm - again, you can visit parks and hop to other parks as the mood takes you.
Dining reservations do require some planning, however, and can be made at 60 days in advance. Table-service restaurants at all the theme parks and Disney Resort hotels require reservations. If there is no availability, please keep trying as cancellations do occur all the time, even on the same day.

Table-Service locations will need a reservation to be made at 60 days in advance either online or by using your My Disney Experience mobile app. If you want to dine inside Magic Kingdom Park, at
Cinderella's Royal Table (inside Cinderella Castle),
Be Our Guest Restaurant (at the Beast's castle) or
The Crystal Palace it's worth knowing that these restaurants fill up quickly. Breakfast at The Crystal Palace is a lovely way to start your day with Winnie the Pooh and friends in a beautiful setting. I have enjoyed that character meal many times!
Quick-Service restaurants do not require reservations so, subject to availability, you can choose to dine at these restaurants without much forward-planning, even if you have a small wait before you can be seated.
