Well, you are off to a fantastic start by having chosen Disney's Wilderness Lodge Resort AND the Deluxe Dining Plan. Nicely done!
Assuming you're staying a full week, I took a look at TouringPlans.com and found that the parks with the lowest crowd levels are the following:
3/23: Magic Kingdom (MK) and Animal Kingdom (AK)
3/24: AK
3/25: Epcot (EP)
3/26: MK, EP, Disney's Hollywood Studios (HS)
3/27: EP
3/28: AK
3/29: EP, HS
3/30: EP
3/31: MK, AK
Now, with your
2013 Disney Deluxe Dining Plan, you'll want to make your Advanced Dining Reservations ASAP, since the 180 day window for making these reservations has already passed (other Guests have booked their ADRs for that very popular week, so the sooner you can book yours, the better!) I advise choosing two Table-Service restaurants per day, with a Quick-Service meal for the third; this will allow you enjoy three meals a day without feeling as if you've spent far too many hours each day in a TS restaurant. On days when we eat two TS meals, we book an early breakfast and an early dinner or an early lunch and a late dinner.
Another thing to consider is if you're willing to spend 2 TS entitlements on Signature Dining Restaurants. If I were you, I would! Some days a large breakfast plus a large dinner means that you won't even have room for a QS meal in between; on those days, a snack or two might be best to hold you over.
