    Hi Jennifer!

    'Ohana in the Polynesian Resort is my favorite Table Service restaurant at Walt Disney World.  Dinner is definitely the way to go, especially if it is your birthday.  If you go for dinner and time it to coincide with the Magic Kingdom fireworks, be sure to ask for a table by the window!  That said, breakfast is also a fun option, but there are other places for a character breakfast, such as Cape May Cafe at the Beach Club.

    The best way to get there from Disney's Caribbean Beach Resort is to plan your day such that you will be in the Magic Kingdom before dinner.  Then you can just take the resort monorail or a boat from the Magic Kingdom to the Polynesian.  If you will be at your hotel before dinner, then you should just catch the bus to the Magic Kingdom; don't worry, the bus stop at the theme park is outside the gates so you don't need a ticket.  Once there, catch the boat or monorail to the Polynesian. 

    After dinner, if the Magic Kingdom is still open, you can return to the park and then take a bus back to the Caribbean Beach Resort.  If the Magic Kingdom is closed then you can take a bus to Downtown Disney (or another theme park with late hours) and then transfer there to a bus going to the Caribbean Beach Resort.  Of course, the fastest way to get from the Polynesian to the Caribbean Beach Resort is via a taxi; you will have no problems getting one at the Polynesian.
