Personally, I would recommend spending most of your time at Magic Kingdom and Disney's Animal Kingdom as these often appealed to my little ones the most when they were that age. There are select rides that have height minimums, but there are so many more attractions and shows that will be perfect for you all. Epcot and Disney's Hollywood Studios will have some things that she may enjoy, but if you decide to avoid those, you will still have plenty to enjoy.
I would also suggest doing at least one
character meal. There are lots to choose from, but my favorites are Chef Mickey's or 1900 Park Fare breakfast, or lunch or dinner at Tusker House. Do keep in mind that many children love the characters, but some are not fans at that age. So, you know her best and can judge whether this would add the magical touch to your trip.

Disney's Yacht Club Resort. The main pool, Stormalong Bay is absolutely fantastic. It happens to be my kids' favorite pool at Walt Disney World with its water slide for my older kids, the lazy river and sand-bottom zero entry pool for my little one to enjoy.
