How exciting! I can imagine how ecstatic your kids will be throughout the entire trip, and all those forever memories that will last them an eternity. My first trip wasn't until my 20's, but you can certainly say I behaved like a 7 or 10-year old when I went (if you ask my wife, I still do :-).
With it being Star Wars Weekend, we were able to do most of our Stars Wars events in a single day (starting first in the morning). But we went in May. With your weekend being June 9th and 10th, and with school just letting out for many, it may cover 2 days to get to all the signatures, Jedi Academy, shows, plus Star Tours and all the other park rides. Since you're staying what looks to be 8-nights and 9-days, you should have ample time to enjoy the other parks and what-not. If your kids (or Mom and Dad) are big Star Wars fans, I would go ahead and use that weekend (over 2 days) to make sure you have enough time to experience everything, and perhaps catch what you miss on the first day for the second day. Again, it can all be done in 1 day, but with the summer crowds it just may take you 2 days..
As for
Fantasy Land, this is located at the Magic Kingdom park, directly behind Cinderella's Castle, planted in-between Liberty Square and Tomorrowland. You'll get to experience this before me (our trip not scheduled to the Fall), so say "Hi!" to the Beast for me if you see him!
