    We'll be staying in WDW Resort for 7 nights with a 7 day park pass. ? is whether or not a 1 yr old and 4 yr old would have fun in Epcot. I read where it said it takes 2 days but I wasn't for sure if I should use two of our days in a park for "older"

    Hi Penny!  Our grandson who is three loves EPCOT but of course not all the attractions are appropriate for that age.  You could easily do the things that your children would enjoy in less then one day.  Some of the favorite places to go when we have our grandson is as follows:

    Journey Into Imagination with Figment
    Imageworks Labs
    Living With the Land...he loves the boat ride!
    The Seas With Nemo and Friends-ride
    Inside the Seas With Nemo and Friends-many interactive things for the kids to see and do...don't miss the manatees!
    Turtle Talk With Crush ****** absolutely a must!
    Club Cool.....be careful when trying the Italian coke product!
    Kidcot Fun Stops for the kids are located at each of the countries in the World Showcase and various places in Future World
    Gran Fiesta Tour in Mexico is a nice calm boat ride for a rest
