I would definitely suggest getting a 4-day ticket to allow yourself more time to enjoy the parks with your little ones. I have three children and two of mine are the exact same ages as yours. So I know exactly how much time you'll need to allow for yourself and your children! If you are going to be staying at
Disney's Art of Animation Resort for six nights, then you should have at least five full days to visit the parks. Another option would be to get a 5-day ticket. You could spend two days at Magic Kingdom Park, one day at Epcot, one day at Animal Kingdom and still have one day left for Disney's Hollywood Studios. Plus, buying a 5-day base ticket will actually cost less than a 3-day ticket with the Park Hopper Option.
In my experience in traveling with younger children, having the Park Hopper Option isn't really necessary. We rarely get to do everything we want to do in ONE park in a day! If you decide to take a break during the afternoon, you can always go back to the same park later in the day. Just be sure to make your dining reservations for the park you plan to be in each day.
Last but not least, I think your children would love Disney's Hollywood Studios! My family's favorite attraction is
Toy Story Midway Mania! and my little ones love seeing their favorite characters from Disney Junior at
