We're staying at the Port Orleans Riverside. Question: the Unofficial Guide to WDW it says that commute to restaurants in hotels may be 40 to 60 minutes each way. Does this mean it will take us this long to get to and from each of the parks each day?

On average, traveling to the parks from Port Orleans Riverside will take anywhere from 10 - 20 minutes.  When traveling to a hotel from a hotel on Disney property, it is a little trickier since buses  don't make those specific trips.  That means that you will need to use a park as a hub to catch a connecting bus.  For example, when we go from Port Orleans Riverside to Bomas at the Animal Kingdom Lodge, we actually leave the resort by taking the Animal Kingdom bus and then transfer at the park to the Animal Kingdom Lodge bus.  Many of the Disney Moms also take advantage of the many taxis that are running throughout the resort to travel from hotel to hotel.
