    We are staying at Pop Century, when we go to Chef Mickey for b'fast which park is best to hit that day Epcot or HS, and what is our transportation options for that day. No hopper pass.

    I love Chef Mickey - great breakfast choice!    As you know, Chef Mickey is located at the Contemporary resort adjacent to the Magic Kingdom.  Therefore, Magic Kingdom would be the most logical choice if any of the four theme parks were up for consideration.   However, since your preference is to visit EPCOT or Hollywood Studios afterwards, the quickest park to reach would be EPCOT.   From the Contemporary, you can travel by monorail to the Transportation and Ticket Center and switch to the Express Monorail to the main EPCOT gate.    Hollywood Studios would be best reached by bus, however, may take a bit longer.   Either of these two parks should provide you with bus access back to Pop Century.
