Oh boy! You are staying at one of my all-time favorite Walt Disney World Resorts!
Disney's Polynesian Village Resort is magnificent in every way! Between the beautiful themed lobby to the immaculate grounds, just simply walking around this resort is magical. It's home to some of the best dining options and the location is perfect! You are in for a wonderful visit!
The first place I ever watched the Magic Kingdom fireworks was at the beach of the Polynesian Resort. It's the most picturesque place to enjoy the nighttime spectacular. There are a few chairs spread out around the beach areas, but they are very limited. Unless you head down there very early, I would go in with the expectation that you will not get one. If it's not much trouble, bringing your own folding chairs from home might be a great idea. This way, you can head down to the beach at your leisure knowing that you will have a seat when you get there.
Lori, since you are staying at the Polynesian Village Resort, you need to take advantage of the fantastic dining options there.
Kona Cafe is my favorite place to enjoy breakfast at Walt Disney World. The Macadamia Nut Pancakes with melted macadamia nut butter is a dish I think about all of the time. We make the trip here on almost every visit! There is also
'Ohana, which is home to Lilo and Stitch in the mornings. They are part of a great character breakfast that also includes Mickey Mouse! Dinner here is absolutely delicious, and home to the famous 'Ohana Noodles!
