We will be staying off-site. Is it possible to leave the park during the day and return to the same park on the same day? I'm wanting to have a cooler in the car for meals to save money.

While WDW would probably like to hold you captive, you are free to leave the park and return the same day. In fact, you can leave and return as many times as you need.

When you return, you’ll still place your Magic Your Way ticket in the reader and have your finger scanned, however it will not deduct another park day. It’ll read that you are just returning to the park and in fact, the Cast Member will see the words “already used” on their display. If you were to go to a different park, then you would need the park hopping option on your Magic Your Way ticket.

Perhaps you could also store a soft-sided cooler inside a locker to save a trip (or 2) to your vehicle. Pack frozen water bottles or juice boxes and retrieve them throughout the day.
