    We will be staying at Coronado Springs the first week of December and I see that El Mercado is not open yet. What other options do we have for breakfast? Do rooms have mini fridge and microwave?

    You must be so excited for your upcoming visit to Walt Disney World--and a stay at the absolutely gorgeous Disney's Coronado Springs Resort? Outstanding!

    For the latest updates on all things dining, take a look at Dining: Know Before You Go. There, you'll find a very helpful link on dining options that are currently available at Walt Disney World theme parks, Resort Hotels, and Disney Springs. At the time of this writing, Disney's Coronado Springs Resort's Dining Locations details your breakfast options quite nicely.

    First, consider a light breakfast at Barcelona Lounge, located in the lower lobby of Gran Destino Tower, including pastries, fresh fruit, coffee, tea, hot cocoa, and orange juice. Cafe Rix, located right across from Panchito's Gifts and Sundries--not far from El Mercado de Coronado--offers breakfast sandwiches and burritos, assorted pastries and doughnuts, fresh fruit, cereals, coffee, tea, hot cocoa, and smoothies. For a more substantial breakfast at a Table Service Restaurant, go right next door and check out the great breakfast menu at Rix Sports Bar & Grill. Multiple entrees, lots of sides, coffee, tea, juices, kids' meals--everyone will find delicious options just right for them.

    As for the gorgeously refurbished Guest rooms--I stayed there last fall and mine was truly stunning--you can see that the list of room amenities at Disney's Coronado Springs Resort includes a mini-refrigerator and a coffee maker. We sometimes pick up (at a park bakery or resort shop) a few light breakfast items, juice, and fruit to make quick, light morning meals a snap as we get ready for a day of park fun. Intersperse a few more substantial morning meals throughout your stay, and you'll enjoy a wonderful vacation that includes just what you need each day.

    Of course, there are many delectable breakfast options available at all theme parks and Disney Springs, too, so you may want to get to your destination early, then grab a specialty item there some days. (My current favorites include the Pongu Lumpia from Pongu Pongu, located in Pandora -The World of Avatar at Disney's Animal Kingdom Park and Rising Moons Overnight Oats from Ronto Roasters, located in Star Wars: Galaxy's Edge at Disney's Hollywood Studios). Both are light, delicious, and not quite like anything else you can find at other locations.
