I understand your husband wanting to bring his high-end camera with him to capture all the great memories you'll be making at Walt Disney World. I also understand not wanting to carry it around everywhere you go! I'm the big-bag carrier in my family, so I always end up lugging around the stuff no one else wants to carry. I'm definitely always on the lookout for ways to lighten my load.
Disney's Caribbean Beach Resort, like all Walt Disney World Resort hotels, has a safe in each Guest room that is free for you to use. Your husband's camera should fit inside, but if he has a lot of accessories with it, you may find it a bit tight. If his gear doesn't fit, there are hotel safes where you can store the camera equipment while you're away, also free of charge for Guests. Just take your items to the front desk and they'll take care of it for you.
One other idea I've heard others mention is to bring a lock with you and put your gear in a locked bag or suitcase and stow it in your room. That would save you a trip to the front desk, and allow you to keep your camera with your other things. I will say that in all my visits to Walt Disney World, I've never had an issue with anything coming up missing.
