As I'm sure you've already researched, as a Moderate Resort,
Disney's Caribbean Beach Resort does not offer a fitness center. Additionally, in Resorts that do offer fitness centers, access is reserved only for the use of Guests staying at that specific Resort. One exception is that Guests staying at Disney's Polynesian Village Resort (the only Deluxe Resort without its own fitness center) are permitted to use the fitness center at Disney's Grand Floridian Resort & Spa.
I see a few different options for you to consider. First, if having a fitness center is a critical amenity for you to have, I suggest trying to modify your reservation and
moving to a Resort that does offer a fitness center that meets your needs. Alternatively, there are several gyms and fitness studios located near Walt Disney World Resort that may offer day passes for non-members. Your daughter could use a rideshare service (e.g., Lyft) if you will not have access to a personal vehicle during your stay.
If all else fails, as a fitness coach, I'm sure your daughter has some great ideas on how to get in a workout without traditional gym equipment. That probably won't be at the bodybuilding level, but there is plenty of outdoor space to utilize for fitness, and there's even a great running path circling Caribbean Beach and Disney's Riviera Resort.
