Is there any way to stay at Hollywood Studios until 7pm close, make it to Epcot for 8pm princess storybook dinner, and also take advantage of extra magic hours at MK after we catch IllumiNations? Will lockers still be available at 2pm at HS during SWW?

PHEW!!!!  I guess anything is possible but your schedule sounds exhausting for even the best park traveler!

You can get from Hollywood Studios to EPCOT by either walking on the mile long pathway or taking the water taxi.  Since Norway is on the far side of the park from the International Gateway you will want to make sure you leave plenty of time to get there.  With your dining reservation at 8:00 p.m. and Illuminations starting at 9:00 p.m. this will be very tight for you to enjoy the character dining and also see the complete show.  When Illuminations is finished the crowds will all be exiting and most likely you will find long lines at the buses.  You can catch a Magic Kingdom bus to reach that park for any Extra Magic Hours they may be having.

It is hard to ever judge when lockers will be available.  It is best to get them early in the morning.  You can try when you arrive at the Hollywood Studios but it cannot be guaranteed any will be available at 2:00 p.m.
