Hi. When we stay, we will be on the dining plan. We are opting to purchase base park tickets, NOT hopper passes. Because of our choice we will only be allowed to visit one park per day. Do we have to dine in THAT park, or can we eat at a different park?

Hi Heather - You must have valid park passes to get into a park, even just to dine.  So, yes, you'd have to eat in the park you visit that day, not another park.

You could also decide to dine at a resort restaurant, and then return to the same park.

I hope that helps!  Have a great vacation!
