I definitely recommend Epcot for you and your daughter over Animal Kingdom if you only have two days--and don't waste $54 plus tax on a park hopper upgrade to do both in one day. Animal Kingdom CAN be explored in a 1/2 day but, in my opinion, Epcot takes 1 1/2 to two days... Use that second day to do Epcot
well.
Although Epcot houses the popular Mission: SPACE, Test Track, and Soarin' attractions (for time, skip Universe of Energy and the Imagination pavilion so you'll have time to enjoy the World Showcase), many guests miss out on my favorite hidden gem at Epcot:
Innoventions. In the East wing, you'll find Sum of All Thrills, where you can build your own roller coaster, jet or snowmobile and then ride it on a simulator. My kids love "Don't Waste It." Both its east and west wings remind me of a children's museum and your daughter will be the perfect age to experience these--and I promise, if you do them with her, these will be the activities she remembers.
In the World Showcase, don't miss the
Japanese pavilion with its candy lady. Arrive about 15 minutes before her show and stand in front of the rope. You'll have a good chance of her asking you for your favorite animal and her creating it! You can pick up the times schedule near the ticket windows.
My last recommendation for your daughter while at Epcot: a Kim Possible mission. You can't miss the signs throughout the walkways between Future World and World Showcase directing you where to go. You can also sign up at Innoventions. You can do these as you tour the World Showcase.
