I have spent Easter Sunday at Magic Kingdom Park and it's truly magical. It's actually my favorite Park to be in on an actual holiday because you just never know what kind of magic may happen before your eyes. Easter Sunday can be an extremely busy day and the Park has reached its capacity before. Be sure to check with a Cast Member on your way out of the Park to see if they can provide you with any information on how full the Park is so that you can decide if you want to leave at that time.
If you do decide to leave the Park in the afternoon to go over to
Disney's Polynesian Resort, I would recommend that you just hop on the monorail as opposed to driving. I think driving might actually take you longer just because you have to go to the Transportation & Ticket Center to get your car first. Then you'd need to drive over to the Polynesian and park the car too. With the monorail, you'll be delivered right from the front entrance of the Magic Kingdom directly to the Polynesian.
As far as freshening up for dinner, there is a restroom right next to Gaston's Tavern that you can take the girls into and wash hands and faces, fix hair, and all that necessary primping that us Princesses need to take care of before dining at
Be Our Guest Restaurant. In fact, lots of Princesses have been spotted in their gowns while touring the Parks all day if you can believe it!
