Availability and pricing for
Disney Resorts Collection hotels are dynamic and always in flux. I did a little bit of research and was able to replicate the availability you're seeing. For your arrival date, I was not able to find availability for any Value or Moderate Resorts for a single night but did see broad availability when booking for two nights. Restrictions do sometimes exist for various
Special Offers or specific rates, and while they aren't always publicized, it's pretty simple to identify them with searches as you did. I've had this same experience in the past as well.
The good news is, again, that availability and pricing are dynamic, which means these possible restrictions on room inventory could change at any time. The bad news is that there won't be any sort of announcement - you'll just need to check.
My advice is to look at availability now and make a backup reservation for that night that you would be happy with. I'm seeing some great deals on Deluxe and Deluxe Villa Resorts with the current
Special Offer for Disney+ subscribers! Or, you might want to book two nights at one of the Value or Moderate Resorts you're interested in and extend your trip. For example, two nights at Disney's Pop Century Resort are about the same cost as a single night at Disney's Saratoga Springs Resort with the Disney+ Special Offer. If the availability does change and you are still within the timeframe to cancel or modify your backup reservation, you'll be able to change to exactly what you want!
