The new Walt Disney World Park calendars for 6 months ahead usually come out in the first few days at the beginning of a new month. So look for the September 2010 Park hours to come out in the first few days of March 2010. You can find all of the Park Hours and Event Calendars at

Yes, you do have to make your Advanced Dining Reservations 180 days from the first day of your trip. If you are planning to arrive in Walt Disney World on September 19, 2010, then the day that you can start making your Advanced Dining Reservations is on 3/23/2010, so that gives you a few days to come up with a plan for where you want to eat.
What I do when planning for my trips to Walt Disney World with my son is to list the restaurants that we might like to eat at. Then I look at the Park hours with a special eye to when the Extra Magic Hours are at each Park. I especially like the Morning Extra Magic Hours. From these three things, I plan our vacation according to what Park or Resort that we are going to be eating sit down meals at(Table Service). You sometimes have to be a little flexible about where you want to eat at because sometimes not every restaurant that you would like to dine at will be available. For example, if I choose to spend the day at Epcot, then I would have Teppan Edo, LeCellier, and Nine Dragons as possible dining options.
