As a single adult with no children, I am able to go to Disney World just about any time of year. When during the year would be the best time to go (as far as fewest people) and are there certain times of year that offer better deals as well?

WDW actually has a calendar within its website that identifies the best times throughout the year to go for lighter crowds and better deals.

If I had to select a week, I'd pick the second week of December since the summer heat would be gone, and all the holidays decorations/celebrations would be in full force -- not to mention the lighter crowds and best values.  Happy travels!
