    In September we are going to the Akershus for breakfast. Our breakfast reservation is at 8:40am but the World Showcase doesn't open until 11. Does that mean once we are done with our breakfast we have to leave Epcot and reenter once the park opens?

    Yes, you are correct that the World Showcase doesn't open up until later in the morning (typically 11).   You will find that the countries after Norway where this restaurant is located are roped off and any attractions in the countries located before Norway are not open.  

    I have in the past had similar reservation times.   Once you complete your breakfast, unless it is really close to 11, your best bet is to return to Future World at the main entrance of the park.   All the rides and activities will be in full swing by then.

    By the way, the Princess breakfast as Akershus is terrific.  If you haven't been before, I think you will find it to be a great experience.  Enjoy!
