I saw that several attractions seat 2 people. We have 3 kids (3, 6 & 7). Can we use the swap option so the 3 kids can do the ride (we can't do a ride with 2 kids and leave the other one alone!). If not, can we seat the 6 & 7 together?

There are so many attractions at the Walt Disney World resorts that have different seating options that you will easily be able to find attractions the whole family can enjoy together. For example the Jungle Cruise, 'it's a small world' and Pirates of the Caribbean all have ample seating for your family. Additionally, rides like  the Many Adventures of Winnie the Pooh, will gladly let you and your family take a whole car for the ride. For those attractions where you need it, Rider Swap is an available option also. As for the three kids together, based on the young ages it seems unlikely. The best thing to do is discuss the matter with the cast member on each ride. Lastly, make sure you are aware of the minimum height requirements that each ride may have.
