I'm happy to say that the Disney Springs restaurants are open on Christmas Eve, it just depends on availability for the time of your reservation, and your required number of guests.
It is such a busy time of the year at Walt Disney World, so if you are interested in any
Table-Service restaurants that require advance reservations, I recommend that you secure these as soon as possible (dining reservations open up to 60 days in advance so some of the most popular locations might already be fully booked). The
Quick-Service restaurants at Disney Springs do not require reservations.
The quickest way to check for availability is by using the My Disney Experience app - download this free app to your phone. Tap on "Reserve Dining", and filter the location to "Disney Springs". Add in your date - 24th December - and all restaurants with some availability will be shown.
I just had a quick look, and there's still a reasonable amount of availability when I search for a table for 4 guests at any time of day.
If you have trouble securing a table at your favourite choice, please keep trying as guests change their plans, even on the same day, or day before. As it'll be very busy I would also book something for now, which you can change up to 2 hours beforehand without penalty if your preferred location becomes available.

Disney Springs, the
Christmas Tree Stroll is up and running - I saw it a couple of weeks ago! There are 21 themed trees across the whole of Disney Springs - you can complete a map as you go around, and when you've finished you can collect a special surprise. You can also join a Virtual Queue to meet Santa, and if you are staying later there is nightly snowfall at Town Center. So much to enjoy!
