While
Advance Dining Reservations do require a credit card to be on file, those are just to hold the reservation. It won't automatically be charged unless you don't cancel your reservation within the required timeframe or don't show up for the reservation at all. Otherwise, you will be able to pay with the credit or debit card of your choice at the end of your meal.
Now as for your Disney Gift Cards, I've definitely split my payment for merchandise between a gift card and a debit card before. But if you've bought several of them for your vacation, I've actually discovered a little trick to make your experience a little easier. You may be able to combine the balance of those cards by going to
disney.giftcard.com. You can add up to 6 of the physical cards and transfer the full balance of them onto a single card for up to $1000. This way you can avoid having too many cards to keep up with while you're trying to make your magic.
